Join us for the next installment of our Workshop Dinner Series as we journey to the Pacific Northwest for an immersive five-course culinary experience. Chef Josef Zimmerman and the Luminary Culinary Team have crafted a menu inspired by the region’s coastal waters, forest landscapes, and vibrant seasonal ingredients. Each course will be paired with wines from Oregon and Washington in partnership with Allocated Wine & Spirits.
- Pacific Albacore Crudo: Lime-kosho emulsion, pickled sea beans, cucumber pearls, crispy ginger, shiso oil, chilled cucumber–dashi broth. Paired with Aquilini Sauvignon Blanc – Red Mountain
- Roasted Matsutake & Sweet Corn Cappuccino: Caramelized sweet corn custard, matsutake mushroom espuma, smoked sea salt, chive blossoms, warm brioche baton. Paired with Suzor Pinot Noir “Tower” – Willamette Valley
- Heirloom Citrus & Dungeness Crab Salad: Shaved fennel, watermelon radish, ruby grapefruit, avocado mousse, yuzu-chili vinaigrette, toasted nori dust, micro chervil. Paired with Valdemar Estates Chardonnay – Columbia Valley
- Seared Maple-Glazed Duck Breast: Roasted plum demi-glace, charred spring onion, wild rice risotto with toasted hazelnuts, pickled huckleberries. Paired with Aquilini A56 Red Blend – Red Mountain
- Meyer Lemon & Huckleberry Pavlova: Crisp meringue shell, Meyer lemon curd cream, huckleberry compote, vanilla bean whipped mascarpone, lemon verbena syrup. Paired with Project M Chardonnay “Anicca” – Willamette Valley
